Scallops

Scallops inhabit all the oceans of the world, with the largest number of species living in the Indo-Pacific region and never in freshwater. They are one of very few groups of bivalves to be primarily “free-living”, with many species capable of rapidly swimming short distances and even of migrating some distance across the ocean floor. Most species live in relatively shallow waters from the low tide line to 300 feet.

Scallops are mollusks that have two beautiful convexly ridged, or scalloped, shells hinged at one end which is why they are known to marine biologists as bi-valve mollusks. The edible portion of the scallop is the white muscle located near the center of the opened shell. The reproductive glands known as “coral” are also edible, although not widely consumed in North America.
